Probably the best book for starting out is the Evi Nemeth et. al. book:

It's more for system administration, not web mastering.
The book, and some tight deadlines, should get you through your first year
or two of sysadminning.
In the earlier edition (red cover) they warned you what kind of career you
were going to get yourself into.
I'm not sure if that's still in there.
This edition was made large enough to be used as a textbook.
