She can also set Thunderbird to be the default mail client in Windows.
If she applied updated, Outlook Express may have reset itself as the
default program.
Control Panel > Internet Options > Programs> set Email to Thunderbird.
With Vista there is a "Default Programs" button in the start menu.
Also check the scanning software, it might have been configured to not
look at default email programs, but to use Outlook Express directly.
As another work around she can also try to save the scan as a .pdf file.
